Summer is in full swing, and we’ve been enjoying our favorite hot weather recipes. One healthy “dessert” we love is a raw chocolate mousse. Mmm!
This recipe is adapted from the “Choconut Mousse Pie” in Living Cuisine by Renee Loux Underkoffler. She goes all out to create a raw pie shell, filling, and cream frosting, and in true gourmet style it can be a very time consuming undertaking. My take on this mousse is a compromise- all the yumminess, and only ten minutes in the kitchen!
You Will Need…
- 1 1/4 cups pitted dates
- 1 1/2 Tbsp vanilla
- 4 Tbsp maple syrup (or 2 Tbsp raw honey)
- 1 Tbsp coconut oil
- 3 ripe avocados
- 1/4 cup Navitas Naturals Organic Raw Chocolate Powder (Cacao)
- 1/4 Cup Carob Powder (if you can find it raw, go for it!).
- Shredded coconut (use organic; non-organic always seems to have propylene glycol added, yuck!)
- 1/2 pint of strawberries
Chop your dates and place them in a bowl with 1 1/2 cups of water for five minutes to soften a bit. Drain them and blend them in a food processor with the vanilla and coconut oil into a smooth paste. It should look something like this:
You can add a few drops of water if you need to (she recommends saving the water from soaking the dates for this purpose).
Now cut your avocados in half and pit them. Scoop out the flesh and add to the processor and blend til smooth.
Now, add your cacao and carob powder. Blend til smooth and creamy with an even dark color, like so:
Next, sprinkle with shredded coconut and decorate with strawberries. The strawberries really make the mousse for me, providing some texture. Alternatively I like to place the mousse in a bowl on a plate, put strawberries along the edge of the plate, and dip them in the mousse. Either way, this is delicious!
Another healthy snack or dessert is frozen juice popsicles. I love using Knudsens’ pineapple coconut juice- which is far more delicious than juice from concentrate. Sometimes I will start the night before we want to have the popsicles, and pour a tiny bit into our popsicle holders (so that it doesn’t quite reach the stick). The next morning, when the first layer has frozen I add another juice with a bright color (such as Knudsen’s cherry, or grape, or a strawberry lemonade). An hour or so later, when it is slushy but not fully frozen, I remove the popsicle stick carefully and add a third juice. My kids think this is magic!
Another raw food creation we love is our breakfast “cake”. This is my go-to breakfast recipe for sweltering days when you wake up and you’re already sweating before you’re even out of bed. It can double as dessert, too!
You will need:
- 1 cup of raw macadamias (raw/unroasted cashews will work if you don’t have macadamias)
- 1 Tbsp coconut oil (warm to liquid state if it is hard)
- 1 Tbsp raw honey
- 1/2 cup chopped pitted dates (you may want to soak in a cup of water for five minutes to soften)
- 1 tsp vanilla
- 1/2 tsp nutmeg
- 1/4 cup Navitas Naturals Organic Raw Pomegranate Powder or 1/2 cup fresh berries of your choice (you are looking to give your frosting good color, and your body some antioxidants )
- 1/2 cup raw (or non-roasted) cashews
- 1/4 cup coconut oil
- 2-3 Tbsp raw honey
- juice of half a lemon
- 1 tsp vanilla
Fresh berries of your choice and shredded coconut
Mix the crust in a food processor until it is no longer runny or crumbly. If it is runny and you need to thicken it up a but, you can add shredded coconut. Scoop it onto a pie plate and press it down evenly. I use a fluted French tart pan with a removable bottom because as they say… presentation is everything!
Next blend your topping ingredients, spread over the crust, and garnish with berries. You may wish to chill it (I put mine in the freezer for 15 minutes)- this also helps it firm up a bit so it is easier to serve.
Last but not least, I thought I’d share our Smoothie Ritual. This is our mid-morning snack during warm weather, and the way I pump my children full of good stuff! It is also a chance to relax, meditate for a moment, and straighten out my day if it has had any emotional wrinkles so far. I like to use a special glass for my smoothie, sit back with my feet up when I drink it, and make sure I am centered and “conscious”.
We start with a base of nut milk- either almond or coconut. Alternatively you could use water, juice, or organic (raw) milk, but I prefer coconut milk. I usually buy the cartons of vanilla coconut milk, but if you are using coconut milk from a can you might want to dilute slightly with water as it is so thick, and add some vanilla and an extra dash of raw honey to sweeten it. I use equal portions of liquid base to frozen fruit (usually strawberries), and add…
- 1 Tbsp coconut oil
- 1/4 cup almond butter
- several tablespoons of Navitas Naturals high antioxidant powdered raw fruits (acai and pomegranate, or the acai Twister are my faves)
- heaping tablespoon of Garden of Life raw Perfect Food greens supplement
- heaping tablespoon of (Navitas Naturals) chia seed
- big handful of pitted dates (at least ten)
Blend away… and garnish if you like with shredded coconut, fresh berries, sweetened cacao nibs, or whatever makes you happy.
