Fun Summer Lunches And A Giveaway


To celebrate the Waldorf Connection Expo (launching with a free “sneak peek” call today at 4pm Eastern!)  I’m excited to bring you the first of a weekend full of giveaways.  The Waldorf Homeschool Planning Survival Kit features soothing, relaxing Weleda Lavendar Body Oil, a Weleda Rose Soap, Bach’s Flower Remedy Rescue Pastilles, a Navitas Naturals Organic Raw Chocolate Kit for energy and mental acuity, and some beeswax tea lights and votives to set the mood from Big Dipper Waxworks.

For picnics or picky eaters, we love Lunch-On-A-Stick.  All you need is bamboo skewers and an assortment of finger type foods that will slide on easily (for the very small children, they can simply eat the cubes without skewers for safety’s sake).

We like tortellini with cheese cubes and grape tomatoes, and another favorite is ham, pineapple, and cheese cubes.  MMM!

We also love to make “people” out of our food.  In our house, playing with your food is part of the preparation!

The other day we had “Crazy Hair Kids”…

We used multi-colored spiral brown rice pasta for the hair, with nitrate-free beef hot dog circles to make a face, peas for eyes and nose, and an organic ketchup smile.  Carrot slices give our kid a body, arms and legs.

We’ll share more of our creations as we eat this summer… the possibilities are endless, especially with garden fresh veggies ripening.

  1. We love cucumbers peeled, halved lengthwise with the seeds scooped out and filled with tuna salad. It’s a great way to use up the overrun of cukes from the garden, fast and cooling too.

  3. My kids’ current favorite summer lunch is yogurt with fresh berries—any kind, really, but J prefers strawberries & A likes blackberries best—and bread with honey. 🙂

  4. Homemade chicken salad… we pack a huge bowl of this and go to the pool. I slice cheddar cheese and sprinkle chunks on top and we have with TLC crackers. YUM! It is not summer without it.

    In the summer we love a light lunch of cheese, grapes & yummy grainy bread!

  6. We love hummus on crackers or pita bread with fruit, a big smoothie made with bananas and strawberries or pineapple, or a yummy salad with lots of colorful veggies. Perfect for warm summer days! Enjoy the sunshine everyone!! :o)

  7. Your kiddos are so darling! Gosh you are creative with meals! We are sort of boring I guess. My eldest is so picky i have a hard time getting him to eat much.

    We love rice and pinto beans. I have a bean recipe we love made in the crock pot with cumin, oregano, basil, lots of fresh garlic & a tiny bit of cayenne.

    I love the skewer idea!

      I went to the library and ordered TWENTY books on kid’s cooking, snacks, and summer picnic meals- hence my “creativity” 😉 I chose my favorites and we are eating good! Also, the skewers and food people really work for the picky eaters because they can choose which foods to put on their skewer and they get so engrossed in eating different body parts and laughing about it they’ll swallow foods they usually wouldn’t pick.

  8. A favorite summer lunch for us are veggie pita pizzas. Basically we take pitas and use cookie cutters to cut them into shapes. Then we shred our raw cheese, crinkle cut the fresh veggies that we have on hand, and add them (with tomato sauce first) to the pita. I bake them on a cookie sheet greased with olive oil for 8-10 minutes. Its quick and a great way to eat up our garden’s veggies- plus the kids can have fun.

  9. We love hard boiled eggs served with fresh veggies and fruit with peanutbutter dip. Love your lunch on a stick and the giveaway baskets looks delightful. Thanks for the chance!

  10. My kids also love to make fruit and cheese kabobs for a fun summer lunch.

    They also love to make faces or other “art” on a tortilla with a selection of fruit, veggies, and peanut butter.

  11. Ants on a log makes everyone happy in our house, and the kids can do most of the preparation!

  12. We love to go our to the garden and gather what we can to make a salad and then have a few different options for a protein to add: chick peas (or other bean), nuts, cheeses….yummy!

  13. Hmm, gazpacho! Nice and simple. It gets too hot to really cook here in Miami…

  14. we love a good bean salad–black beans, corn, sweet bell pepper, cilantro, sometimes a little mango or avocado. The kids love to eat it with blue tortilla chips. It serves as appetizer and/or main meal for much of the summer!

  15. We love grilled portobello with guacamole and melted cheese on top- Yum! Bean salads are great too 🙂

  16. We absolutely love deviled eggs, cherry tomatoes, and sugar snap peas with a lovely glass of lemonade. Yum!

  17. Our favourite is toasted tomato sandwiches with a tall glass of cucumber water 🙂

  18. I am loving listening to the waldorf expo 🙂 It’s my first time and it’s wonderful. One of our favorite summer lunches is homemade pasta. The kids love picking broccoli or beets from the garden and then we turn it into delicious pasta noodles and add in peas, carrots or whatever else we might have ready for picking along with a big glass of rhubarb juice 🙂 I can’t wait *grin*.

    In the summer, we love to eat watermelon and fruit smoothies. well, I guess we like that al year round too.

  20. A favorite lunch for us is dahi bhaat. Steamed rice with yogurt, sometimes spiced with ghee, curry leaves, mustard seeds and cumin seeds.

  22. Our favorite lunch lately is pretty much anything we can eat outside on a blanket… it’s amazing what fun thta adds to a meal! 🙂 My personal summer fav is peanut butter and cucumber sandwiches tho! 🙂


  23. Love this! One of our favorites is a simple caprese salad… grape tomatoes and fresh basil from our garden, Mozzarella balls and a balsamic drizzle…. Yum!

  24. Yay- summer lunches. My kids fave is greek salad and fresh fruit. Green smoothies are also very popular once the weather turns hot 🙂

  25. YUm! Your lunch looks great! i love walking outside and picking our lunch! Fresh greens for salad, fresh snow peas, blue berries and raspberries.   26. What we love during summer is not a real lunch – we make a picnic – so we pack cherry tomato, cut cheese and ham, slices of 14 grains baguette, and any of the berry we have at the moment and head outside 🙂

  28. One of our summer staples…rice salad. I cook up 2 cups of jasmine rice then add whatever is in the fridge. Jirst a vinegrette with mayo dressing, then hard boiled egges, tuna, olives, tiny onions, tomatoes…imagination is one’s only limit!
    What a wonderful giveaway for a busy, homeschooling mother, thank you!

  29. My daughter loves humus, so I just set out a tray with veggies(esp.carrots!!), crackers, pita, grapes. She loves to dip

  30. Wow! I am loving everybody’s ideas. We keep lunch on the light side when it’s hot out and then have a bigger meal AFTER nap time. Right now our light lunches consist of mostly berries and nuts. Organic strawberries, blueberries, raspberries and pecans, walnuts and cashews. Love it!

  31. Never tried the lunch on a stick idea. My kids favorite is a seasonal fruit salad with cashews and Maple whipped cream on top.
