Breakfast Parfait

It’s been a hot week.  Here’s another no-cook breakfast to start the day off right.

Breakfast Parfait

(adapted from “Superfood Cuisine” by Julie Morris)

    • 2/3 cup water
    • 2/3 cup raw cashews
    • juice of 1 lime
    • heaping TBSP raw honey
    • 2 1/2 cups frozen organic strawberries
    • 1 cup organic yogurt
    • 1 cup granola
    • berries for garnish

Blend water, cashews, lime juice, honey, and frozen strawberries.  Spoon 1/4 cup yogurt into 4 glasses or mason jars. Pour equal portions of strawberry mixture over yogurt.  Spoon 1/4 cup granola in each glass.  Garnish as desired.  Serves 4.
